500g rich tea biscuits (check they’re vegan – some supermarket own biscuits are)
500g dairy free margarine (Vitalite is our favourite but any is fine)
500g sugar (I use brown as it gives it an extra toffee-like flavour)
500g chopped dates
Boil the sugar and margarine well (for a few minutes) then add the dates and give a minute more. Take off the heat. Stir in the crushed biscuits (leave some big bits as they stay nice and crunchy), flatten & chill in the fridge. Enjoy!
