I was given this recipe by my friend Kelda and it’s so quick and easy I have made it many times… I like to put in a little vanilla essence too.
100g/4oz vegan margarine
100g/4oz light muscovado sugar or any brown sugar
1 tbsp golden syrup
150g/6oz self raising flour
optional 85g/3oz anything you like – chocolate chips, sunflower seeds, smarties, crystallised ginger….
Oven – 180C
Cream together marg and sugar.
Beat in syrup.
Stir in other ingredients and bring mixture together with your hands.
Divide into balls (large walnut sized-ish)
Bake on greased baking sheets 12 mins but do check them before that.
Cool on wire rack.
